I am cursed. Advice?

Nothing like the simple roast. Well it has not been simple for us for the past year. We had such good lick with roasts in the crock pot for years. Now any way we try it it comes out tough as heck. Even got a new crock pot, but it still sucked. I have tried different cuts, the Alton Brown way, I am just stumped.

Here is what always worked. Taters and carrots on the bottom of the crock, roast with seasoning, rest of taters and carrots, and one can of beef broth. Crock pot low for 5 hours. Any suggestions? Might try the oven for 4 hours at 350, like Theresa’s mom does. Stumped
