A good pastrami sammich trumps all. But I find myself just enjoying pastrami cooked in a skillet with some crisps for a lunch meal.
Still smoking corned beef has changed me as a man. If I knew I could make my own pastrami by just smoking corned brisket I would of been smoking years ago.
I did two with a water bath for 24 hours and two just rinsed. There is a difference between them, and the unsoaked has more corned beef flavor and is spicier. I kinda like both, but those I soaked have less of the corned flavor so they rock a bit more. I smoked the heck out of the 4 hunks and damn they are good.
saved an unsoaked hunk for slicing later.
