I always have good things to say about Hollenbeck farms products. We have not been getting much from them lately because we mostly do tenderloin primals from Sams for out beef meals, but get a roast or burger every now and then. I really enjoy their bacon and headed to their booth one sunday to get some. Unfortunately they were out of pork bacon and he suggested beef bacon. Well it is from them so it has to be good right? Indeed it was.
It is cured and smoked like pork bacon and has the cut of a cottage / shoulder bacon. It cooked up nice and I really enjoyed the taste. I did pick off the fat though, as I do with the pork shoulder bacon. Darn good.
