Theresa suggested tacos for dinner and I got a hankering to mix up mix, mix up the mess.

I made the guac, heated some black beans, corn torts, sour cream and used some smoked chicken for the meat. I wanted to make it as different as I could while playing with some variations I have seen at some mex restaurants. Almost carnitas with chicken.
For the chicken I used some chicken meat I had gotten off a smoked chicken and made up a spicy broth for it to soak up the goodness.
Asked for some help on the forum..
Ended up using chicken broth to hold some onion, garlic, red and green cayenne peppers, chile powder,and a sorrono pepper. Brought it to a boil and added the loosely chopped chicken to suck up the juices. By the end the chicken was spicy as heck and full of flavor in a shred like form.
used the guac and other fixings to make up the first burrito. Of course some if you dare salsa to top it off.

This is all three. #1 is on the left. #2 was without lettuce and cheese (my favorite). #3 is like a taco rito and was my least favorite. An experiment this was for sure.
All were still really good. Theresa made her regular tacos and was happy. All the flavors in mine were amazing. The smoke was an after taste. The chicken was well spiced after I let the spicy liquid penetrate the chicken. The sour cream and guac cooled down the spice. It was delicious. Next time I will work in a green chile sauce and some tomatoes.








Wow, smoked chicken tacos with homemade guac sounds heavenly.
Truth is I usually cook for two. I know what Theresa likes and gradualy introduce new flavors to her. It works well and we continue to expand. This was a leap in many ways so I knew she would not go as far as I wanted. Thing is I held back a bit. When the opportunities arise I like to try new things, This was a perfect time to try something new and I jumped at the chance.
I need to make my own green chile sauce cuz using the canned just makes me ache with our chicken and chilies meal. I want everything from scratch. The quest begins and I will figure something out for sure.
I will enjoy a guac free version of this for the next few lunches.

Man I wish I could smoke my own chicken. Reading your posts and looking at the photos is torture.
I plan on smoking Thurs eve and can throw a chicken on for ya no prob. Serious.

Here’s my fried chicken taco recipe
1. Chop up chicken into small bits
2. Fry the chicken in a skillet with a dab of olive oil, garlic and a little chili powder.
3. When chicken is a couple minutes from being done, drain chicken if necessary, throw in some salsa, cilantro, chopped onions and cook with chicken.
4. While chicken is cooking, put corn tortillas on a plate with a damp paper towel over them and microwave for about 20 seconds, the idea is to steam the tortillas just enough so the corn tortillas don’t break in half when you fold them.
5. Lightly coat one side of corn tortilla with olive oil, fold into taco shape and fill with chicken filling. Throw in clean skillet and cook. I usually cook 5 tacos at a time in my skillet. (Mom used toothpicks to keep them closed, I just press them down with a spatula.)
6. Fry until golden brown on each side.
7. Fill with lettuce, cheese and sour cream. MMMMMM delicious.

I picked up two chickens from sams today.
Any clue on how you would like it spiced?
I usually do a mix of cayene, salt, black pepper, some ground bay leaf, and a dash of mistys seasoning.
