shrimp scampi all right
As a kid I absolutely loved scampi from Red Lobster. I have tried to make it a few times before, but it has never really turned out well. I googled around and got the basics. I used some wine, clarified butter, shredded garlic, and salt and pepper. Baked at 400 for 10 minutes. It was my best attempt so far, but not the rich buttery flavor I was looking for.


Yum! Do you like the oven version better than the sauté pan?

My issues in the past were a few things. First not using clarified butter and prob too much wine. So the wine, water in the butter, and water from the shrimp would make it more like soup instead of the oily rich buttery goo. Also I over cooked the shrimp every time before. So I tried the oven method to see if it made a difference. Meh….
I just really want the “sauce” to infuse tons of flavor instead of add a bit. Maybe smaller shrimp will help too. I plan on doing some more tinkering till I get this down.
So I am thinking use a pan, get the butter really melted and reduce the wine, get the garlic and parsley in there then add the shrimp. That should work I bet.

Might I suggest getting the sauce going then cook the shrimp just till they turn pink and just start to curl.

Thats the plan. Hitting midwest seafood tomorrow for squid, crab legs, and more shrimp. I will get this down eventually.

Finished off some of the 100% agave Jose last night. I was getting lemons for the seafood and figured some tequila would go nicely.
