ok… so where do I find the ‘knife guy’ in Omaha?!? I have seen one in the entrance to HYVEE before.

Much as I like Alton Brown, he’s wrong! I used to work at a packing plant (meat, not fudge), and those guys carried a steel on their belt, and a whetstone in their pockets. Their knives needed to be sharpened five or six times a day, and face it, no packing plant will spring for the bucks to have them professionally sharpened. It can be learned, with practice, by anyone at all.

in that situation I figure it is just part of doing biz for sure.
